Have been looking at this recipe from Rachel, 温馨小厨 the oreo cheesecake and just couldn't find time to do it. Bought the cream cheese and left it in my fridge for weeks and didnt touch. Finally have the time on Sunday and decided to do it.
It is very easy to do... Following the steps as mentioned in Rachel's blog. And the cheesecake turn out to be nice!
Easy steps...
Ingredients (Make 12 cupcakes)
(A) In room temperature
2 egg yolk

70g sweetened condensed milk
(B)
2 egg white
1 tsp lemon juice
15g sugar
(C)
1 packet of Oreo buscuit (137g)
Methods:
1. Preheat the oven at 160'c.
1. Seperate the oreo, keep 12pcs without the cream. Crush the rest to fine crumb.
2. Fill up the base of the paper cups with oreo crumb. lightly press and flatten with a teaspoon.
3. Use a mixer to mix the ingredient A until smooth and well combined.
4. Mix ingredient B with a mixer until soft peak.
5. Fold in ingredient B to A. Fold well.
6. Fill up the paper cups until 80% full. Top with a piece of oreo biscuit.
7. Bake 25mins in waterbath.
8. Leave it to cool completely before put it into the fridge to chill it.
My daughter likes it the most. She finished most of the cheesecake by herself. :-)
