Oreo Cheesecake



Have been looking at this recipe from Rachel,  温馨小厨 the oreo cheesecake and just couldn't find time to do it. Bought the cream cheese and left it in my fridge for weeks and didnt touch. Finally have the time on Sunday and decided to do it.

It is very easy to do... Following the steps as mentioned in Rachel's blog. And the cheesecake turn out to be nice!

 


Easy steps...
Ingredients (Make 12 cupcakes)
(A) In room temperature
2 egg yolk
250g cream cheese
70g sweetened condensed milk

(B)
2 egg white
1 tsp lemon juice
15g sugar

(C)
1 packet of Oreo buscuit (137g)

Methods:
1. Preheat the oven at 160'c.
1. Seperate the oreo,  keep 12pcs without the cream. Crush the rest to fine crumb.
2. Fill up the base of the paper cups with oreo crumb. lightly press and flatten with a teaspoon.
3. Use a mixer to mix the ingredient A until smooth and well combined.
4. Mix ingredient B with a mixer until soft peak.
5. Fold in ingredient B to A. Fold well.
6. Fill up the paper cups until 80% full. Top with a piece of oreo biscuit.
7. Bake 25mins in waterbath.
8. Leave it to cool completely before put it into the fridge to chill it.

My daughter likes it the most. She finished most of the cheesecake by herself. :-)

地瓜芋圆 (Sweet Potato & Yam Ball)



每次看了台湾的美食节目介绍地瓜圆甜品, 我就直流口水... (=,=). 心想如果能够品尝该多好啊. 其实这里应该有吧,但是我就不知哪里有的买.
为了解一解我的想地瓜圆之苦, 我决定了自己动手做.
烦一烦老爷, 要他放工了载我去买材料.
其实做法简单, 但必须花上一定的时间. 如果只做一种就省时. 我用了两小时完成.
 
我忙着准备材料, 没时间拍照.这全部都是我家少爷拍的.
 
材料也很简单:-
地瓜/芋圆
地瓜 (Sweet Potato), 我用了两种. 紫地瓜和橙地瓜)
芋头 (Yam)
木薯粉 (Tapioca powder)
糖(依个人喜好)
 
爱玉 /仙草个 一包(我买了超市所卖的)
 
我先把地瓜和芋头蒸熟.我懒的分开,就全部一起蒸了.
蒸熟了,就把地瓜和芋头分别放在碗里. 
趁热把地瓜和芋头压粹.
 
压一压 ...

压好了就加入木薯粉. 搓啊搓的, 只要搓的成型, 不粘手就行了.
拿一小团, 搓成长型. 切成一小块.
煮一锅水, 把切好的小块放进沸腾的水中. 等到芋圆浮起, 就捞上放进冷水中.
 
我家少爷忘了帮我拍放了木薯粉和搓好的的照片....

我做了太多了,没办法吃完. 所以把剩下的收在冰箱里.
我用了仙草, 爱玉, 亚答子, 地瓜圆, 芋头圆. 口感超好的.Q Q 的.
但是.... 味道不好.应该是放了太多的木薯粉. 所以有很重的木薯粉味道. 孩子们都不给脸,只吃仙草,爱玉和亚答子. ..... 唉....
我也懒的放美美, 因为我家老爷已经等得睡觉了.... 嘻嘻

九皇大帝(九皇爷)千秋

We are having vegetarian for 9 days during the celebration of 九皇大帝( 九皇爷). To know more about the Nine Emperor Gods, please read from here... 九皇大帝 (English Version) or 九皇大帝 (Chinese Version) . We had been visiting the temples in Singapore.

请水, 请神
On the eve of the 1st day of the lunar 9th month, devotee will proceed to the seaside to invite the 9 Emperor Gods backed to the temple for the 9 days celebration.
敬桌
Full course of the vegetarian meal for offering to the 9 Emperor Gods.


Chinese Opera are staged for the immortals every night during the festival.
后港斗母宫(Hougang Tao Mu Temple)
Temple to temple visit is the tradition of the festival.

On the ninth day of the festival, the devotees will have to send the 9 Emperor Gods back.

 
Its a once-a-year grand celebration especially in Malaysia and Singapore.

Supper - Cheese & Egg Prata

 
One night, my son told me he is hungry.. Thinking of a quick fix for him to fill up his stomach. Searching in the fridge, looking for what I can prepare for him.

Saw some frozen plain prata, egg and cheese... Just come out with this dish..

Its actually quite easy and can be done in just a few minutes.. And most important is that he enjoy it . :-)
Easy and simple ingredients.
Ready made frozen plain prata, Egg, Cheese, Mayonnaise
I add in extra mayonnaise as my son likes it.

I use happycall to do it so no oil needed. Healthy food... :-)

鲤鱼旺莱燕菜



八月初八是家婆的农历生日. 我就做了这个好兆头的燕菜来祝贺她老人家. 这可是我第一次做的...不是很好...请别见怪.
先用一点燕菜加点  红, 黄, 绿色. 放一点点来做它背后的颜色.
等到干了,就加进燕菜.
用了龙眼干的燕菜,所以颜色怪怪 的.
尾巴太嫩, .不小心弄断了. 下次要小心点.

那天, 连续做两种燕菜月饼. 这是要送给家婆的....71 大寿. 我用了龙眼干来做馅. 老人家应该会喜欢吧.

PSLE 终于考完了.我也可以放轻松了... 紧张的时候已经过去 ......
现在轮到我家的少爷考年终考试.... 他并不把考试当一回事, 天天轻轻松松的. 拿他没办法.

这批燕菜月饼是在一个星期前就做好了.就是没空放上部落格.

那天家里没有椰糖了, 就叫老爷帮我去超市买一包. 老爷问我,要买马六甲的, 还是印尼的. 我当然选择了家乡马六甲的椰糖啦...



我做了椰糖口味的小蛋黄..
我没加色素.只有椰糖的天然颜色
把小蛋黄放进燕菜里.

 我的完成品.... 巧可力和班兰口味.

PSLE Starts today.....

这几个 星期, 因为 PSLE 的逼近.. 让我越来越紧张.. 担心女儿有没做好准备. 身体还好吗... 我都不敢给她压力. 担心她能感觉. 我尽量让她放轻松. 一直告诉她,别给自己压力.只要尽力就好.

上个星期, 女儿说, 班上有几位同学病倒了. 应该是压力太大了. 让我频频给她维它命, 开水,鸡精.
反而.....是我自己病倒了. 必须带者口罩, 担心传染给她..

女儿回来,告诉我,今天的英文考试没问题.比起学校给的预考还容易...感恩啊...
希望一切顺顺利利...

Banana and Chocolate Rice Cupcakes 香蕉与巧可力米杯子蛋糕



Last week, daddy bought a bunch of banana (the small type). My two children dont like banana and it has become too ripe to eat (leaving in the kitchen for 3 days). Daddy suggested to use the banana to make banana cake. (See, he still have some contribution ^v^).
I try to source for recipe and happen to see one from one of the blog (I forgot who's blog is that, hee..)
The cake is light and fluffy. Its a bit too sweet. I guess i had put too much sugar as I forgot banana and chocolate rice is sweet too.
Think I had baked too long, the chocolate rice on top all melted.




Scoop too much... Over Flow...

食谱书 Cook Book

最近翻翻书厨, 发现我也有不少的食谱, 而大多数都是蛋糕, 糕点, 饼干之类的. 看来也应该是时候参考参考食谱书里的食谱. 做一做,来满足自己的胃觉与视觉...

但是, 身为一个上班妈妈,须要上班, 做家务, 照顾两个宝贝, 狗狗, 仓鼠, 很多很多的小鱼..... 要有一点点的时间还真不简单.

调配时间还不容易.必须要有很好的时间管理. 告诉自己, 没问题.

Recently I looked thru the cabinet and realised I  actually have quite a few cook book.   And mainly are recipe for kuih, bakery and cookies. Think its time for me to look thru the recipe and put it in good use.

As a working mother, who have to work, do house chores,  look after 2 kids, take care of the dog, hamster and fishes...It is really not easy to have extra time for my cooking n baking pleasure..

Time management is not easy, you have to handle it well.... Telling myself, no problem, I can do it.

Orange Konnyaku Jelly

In the kitchen, we still have a lot of oranges, so the only easiest way to finish them is to use lots of their juice. So i have decided to have Orange Konnyyaku Jelly.

Very easy, just need
Ingredients
1) 1 packet of Konnyaku Jelly Powder
2) 950ml of orange juice (about 10 oranges) Sieve it. Unless you would like to have alot of pulps.
3) Sugar (up to individual preference, as i only add in 2tbsp of sugar, my daughter dont like it too sour.)

 
 
I will suggest to get the orange juice thru Electric juicer. If you are using manual juicer like the one above, you will take a longer time to get the whole 950ml. I estimated i had used up at least 45min just to get the juice. My wrist pain for 2 days after this "exercise" (=.=)
 
Methods
Mix in the konnyaku jelly powder into the orange juice in a saucepan.
Bring it to boil together with the sugar (optional)

Once boil, switch off the fire. Keep stirring to cool it down. Do not leave it to cool itself as it will harden very fast.
Pour into the mould and keep the fridge to chill it.

Its sweet and sour... Very refreshing. (^ v ^)

Parrot Fish (Shu Mei)

我家老爷是钓鱼发烧友 (我也是啊, 但碍于本姑娘必须做工, 做家务,照顾我家两位千金和少爷, 所以没多少机会能去钓啊). 最近钓了一些 Parrot Fish , 叔眉鱼 (排涩啊,不会写啦). 我呢, 当然不会煮啦. 必须要家婆的帮忙.
家婆说, 叔眉鱼不好弄, 鱼鲮非常多, 不过她有办法.

这就是我家老爷与本姑娘..

家婆说,最简单的方法,便是用咸菜叶(必须要大片的, 才能包的完), 把整条鱼包好. 再放点红辣椒和番茄就好. 不须再放盐了. 因为咸菜已经够咸了.

Weeks back during National Day holiday, my boy said  he wanted to have xiao long bao (小笼包) for dinner. So we went to the Crystal Jade at Takashimaya, 4th level.
Think we are too hungry, and forgot to take photos for most of the food... only manage to take 3 items...

回家乡...

在学校假期时,我们回了家乡一趟. 回去一定必定要吃我家老爷最爱的 Mee Rebus 和 Lontong.

还有大家都爱的 Chandol... 味道完全和这里 (新加坡) 的不一样. 吃完了还必须打包....
 
马来人所做的 kueh 真是五彩缤纷 ...
